AOP Olive Oil

The different appellations 'd'huile d'olive vierge' are obtained only from the fruit of the olive tree. Harvesting processes are mechanical or physical. The culture of the olives extends untill the South of France: from the Pyrenees to the Alps up to the Drôme

The olive oil of 'La Vallée des baux AOP' is one of the most famous, to say the most appreciated by the gourmets. Remember that olive oil is the basis of the Provençal kitchen. A must-have and succulent local product.

The harvest of this mythical fruit around the Mediterranean starts in the Valley from mid-September until mid-January. In the region, the secialty is the olive called 'primeur' which is a seasonal product (automn-winter). In order to produce this famous 'olive cassée AOP', it is necessary to use one of the following olives: 'the Salonenque', which takes its name from the original plant from certainly the Saloniques land or 'Beruguette', also known as, depending on the region: the 'Blanquette'

Visit of the mill that makes olive oil 'Mas de St. Jean', where authenticity and typicality are collected to produce a high quality of olive oil. From Mai to September.


The AOP wines

The wines of Vallée-des-Baux are classified in AOP. They have the advantage of a mediterranean climate, with warm and dry summers that provide an exceptional average of annual sunshine of 2,700 to 2,900 hours. The winemakers of the Vallée-des-Baux offer wines of character. The red wines reach their fullnes after five to six years; the white and rosé wines should be tasted when rapidly after they are bottled. Throughout the year, visitors can discover the wines of the Vallée-des Baux directly from producers.

The trail of Château d'Estoublon is a marked walk that is accessible to everyone, including children, and free of access , 12 informative and educational stops. Naturally, the walk ends with a tasting of wines and olive oils, free and open access to the shops of the Château.



On the Cala Melosa bee-farm , you can observe the hive and the bees at work. The extraction of honey for potting; follow the steps of the work of the beekeeper and discover the different varieties of honey according to the butinee flower. From June to half of August.
